Ube Souffle Pancake

Ingredients

  • 3/4 cup or 87 grams of Elufa Ube Mochi Pancake Mix

  • 1/3 cup of cold water

  • 1 medium egg

  • 2 tbsp. vegatable oil (optional)

  • 3 egg whites

Directions

  1. Whip the egg whites until soft peaks form, then set aside

  2. Mix all ingredients together

  3. Fold/add the whipped egg whites to batter

  4. Pour batter onto lightly greased and pre-heated pan

  5. Cook pancakes until golden brown or when bubbles appear on top

  6. Invert the pancake and cook for 2-3 minutes, on low heat, then serve

  7. Optional: Add preferred berries, pancake syrup and butter on top
