Ube Cheese Pandesal

Ingredients
6 cups all-purpose flour
3 tsp instant dry yeast
1/2 tsp salt
1/2 cup sugar
1/4 cup ELUFA ube powder
3/4 cup warm water
3/4 cup warm milk
2 eggs, beaten
1/2 cup melted butter
1 tbsp ELUFA ube flavor plus
1 cup ube halaya (elufa ube halaya mix) – for filling
200g bar quickmelt cheese (for filling)
Bread crumbs for dredging
Directions
Mix all together the all-purpose flour, dry yeast, salt and sugar.
In a separate bowl, dissolve the ube powder in a warm water.
In the mixture of flour, yeast, salt and sugar, gradually add the warm milk, melted butter and beaten eggs. Then put a small amount of ube flavor plus together with the dissolved ube powder. Mix evenly.
Make a lightly flour surface and put the dough mixture and knead just until smooth.
In a bowl, put a small amount of oil and spread it evenly and put the pandesal mixture inside and proof for 1 hour.
After an hour, portion the dough into quarter and cover the remaining dough.
Gently deflate the risen dough and form into a 20 to 22-inch log.
Cut the log vertically in half that can make 7-14 portions
Using the palm of hands, flatten each dough portion and place a piece of cheese in the center.
Fold the dough around the cheese and form it into a smooth ball.
Roll the dough in bread crumbs and arrange on a parchment-lined baking sheet.
Bake in a preheated 350 F oven for about 20-23 minutes. Remove from the oven and allow to slightly cool as the filling will be hot!
