Ube Cake

Ingredients

  • 1 cup of Elufa Ube Powder

  • All-purpose flour, sifted 3 1/2 cups

  • Sugar 2 3/4 cup

  • Butter 225g (1 bar)

  • Eggs, large 3 pcs

  • 1 ½tsp Baking Powder

  • ½ tsp Baking Soda

  • 1 tsp Salt

  • ½ cup Fresh Milk

  • ½ Elufa Gel Color (Violet), dissolved in 1 cup water

Directions

  1. Pre-heat oven to 350°F. Using an electric mixer, cream butter and sugar until light in color.

  2. With the mixer set at low speed, add eggs, one at a time and beat well.

  3. Add Elufa Ube Powder, baking powder, baking soda and salt. Add water, food color and milk.

  4. Lastly add flour and mix unti l well combined but do not over mix.

  5. Pour over a 9”round baking pan and bake for 40-45 minutes, or until tooth pick inserted in the middle comes out clean.
